A good EVOO will smell and taste fresh and fruity, with balanced bitterness & pungency
It is difficult to describe freshness. After 12-18 months, an oil’s flavour could be described as “tired”.
Flavour descriptors could include fresh cut grass, rocket, green tomato
Bitterness is sensed on the tongue and is needed to add to the overall flavour of an EVOO
A peppery / chilli sensation, usually experienced at the back of the throat.
Bitterness & pungency should exist in relatively equal intensities.
A good EVOO should leave a pleasant sensation in the mouth
Reduces risk of coronary and cardiovascular disease
Lowers the level of total blood cholesterol, LDL (bad) cholesterol and triglycerides. In addition, it doesn’t alter HDL (good) cholesterol and may even raise it
Helps reduce or manage blood pressure levels
Provides protection against many types of cancer,
including breast, colon, prostate, and skin.
